Making a switch from high GI (glycemic index) diet food to low GI diet food is essential in diabetic diet. Low glycemic index diets increase blood sugars more slowly and steadily and are more sustaining than foods with a higher GI. The low glycemic alternative for most rices is Doongara rice. This low carb, low glycemic index and high protein soup is tailor made for diabetics.
Doongara rice (also known as Clever rice, Basmati rice, or Mahatma long grain rice), the Aboriginal word for white lightning, is a gluten-free rice that can be found at your local supermarket.

Ingredients :
1 tablespoon low-fat dairy-free spread
1 medium brown onion (150g), chopped finely
1 clove garlic, crushed
1 teaspoon curry powder
½ cup (100g) doongara rice
340g chicken breast fillets, sliced thinly
2 cups (500ml) water
1 liter (4 cups) chicken stock
4 medium zucchini (480g), grated coarsely
Method :
- Melt spread in large saucepan; cook onion and garlic, stirring, until onion softens. Add curry powder; cook, stirring, until mixture is fragrant.
- Add rice and chicken; cook, stirring, 2 minutes. Add the water and stock; bring to a boil. Simmer, covered, 10 minutes. Add zucchini; cook, stirring, about 5 minutes or until chicken is cooked through.
