Chili and Lime Chicken Salad Recipe | Diabetic Salads Diet

This warm chicken salad can be served either as an appetizer salad to stimulate the appetite as the first course of the meal, or entrée salad to be served as the main dish. It is a balanced amalgamation of leafy green vegetables, root vegetable and protein-packed chicken, with spicy and sourish chili lime dressing.

Lime juice makes a great addition into the diabetic salad dressing. Research found that lime juice lowers blood sugar in people diagnosed with type 2 diabetes and also delay the digestion of starches. True hot lime is an insufficient source of carbohydrates and fall well below the recommended minimum sugar intake for diabetics, thus making it a perfect accompaniment to diabetes diet.

Ingredients :
1 cup (250ml) water
1 cup (250ml) chicken stock
340g chicken breast fillets
1 small carrot (70g), cut into matchsticks
1 small red capsicum (150g), sliced thinly
½ small wombok (200g), shredded finely
2 green onions, chopped finely
¾ cup (60g) bean sprouts
½ cup firmly packed fresh coriander leaves
100g watercress, trimmed

chili lime dressing :
¼ cup (60ml) lime juice
2 tablespoons sweet chili sauce
1 clove garlic, crushed
1 tablespoon oyster sauce
1 teaspoon sesame oil

Method :

  1. Bring the water and stock to a boil in large saucepan. Reduce heat; add chicken, simmer about 10 minutes or until chicken is cooked through. Cool chicken in cooking liquid before draining. Discard liquid, slice chicken thinly.
  2. Place chicken in large bowl with remaining ingredients; add chili lime dressing, toss to combine.

To make chili lime dressing, combine ingredients in screw-topped jar; shake well.
