This is a healthy easy diabetic breakfast recipe to make in a hurry. This egg-white omelette is full of flavor and bursting with health. For diabetes care diets, the sources of carbohydrates should not be solely contributed by omelette (omelet). Instead it should come from whole-grain sources such as toasted wholemeal bread in order to provide a lower GI (glycemic index) for the whole meal plan. Diabetic diets should have also the dietary fat and cholesterol content low, as this breakfast recipe proven.

Ingredients :
150g light ham
200g button mushrooms, sliced thinly
12 egg whites
¼ cup finely chopped fresh chives
2 medium tomatoes (380g), chopped coarsely
½ cup (45g) coarsely grated low-fat cheddar
8 slices wholemeal bread, toasted
Method :
- Cut ham into thin strips; cook in heated large frying pan, stirring, until browned lightly. Remove from pan. Cook mushrooms in same pan, stirring, until brown lightly.
- Using electric mixer, beat three of the egg whites in small bowl until soft peaks form; fold in a quarter of the chives.
- Preheat grill.
- Pour egg-white mixture into heated lightly oiled 20cm frying pan; cook, uncovered, over low heat until just browned underneath.
- Place pan under grill; cook until top just sets.
- Place a quarter of the tomato on one half of the omelette, return to grill; cook until tomato is hot and top is browned lightly. Gently place a quarter each of the cheese, ham and mushroom over tomato; fold over to enclose filling. Carefully transfer omelette to serving plate; cover to keep warm.
- Repeat with remaining egg whites, chives and fillings.
- Serve omelettes with toast.
(Right) Button mushroom have a mild earthy flavor and can be eaten raw or cooked.
